As we celebrate our 16 year anniversary, Chef/Owner Randall Brown continues to serve the best tasting, creative fare in central New York.  Our menu changes nightly and features wood grilled meats & game, the freshest seafood & creative vegetarian dishes drawing from regional American, Mediterranean, Island, and Asian influences using the freshest seasonal & local  ingredients. 
All in an unequaled setting in 5 intimate dining rooms with massive stone fireplaces, 4 foot thick limestone walls, and oak paneled ceilings and floors.

In the basement at the Castle, known as THE DUNGEON, is a cozy 4 room pub featuring a casual menu during dinner hours.  After hours it's a great place for a drink, a game of pool or darts, or just watching the koi and crayfish in our 150 gallon fish tank. 

The wine room, a gated 'cell', with  hand painted vine mural ceiling, is a great spot for an intimate dinner. 

On tap we have STELLA ARTOIS, SARANAC PALE ALE, MAGIC HAT #9, BASS ALE, WOODCHUCK CIDER, NEWCASTLE BROWN ALE.

There's no better location for a fairy tale wedding.  A 150 year old restored Irish-styled stone castle,  8 acres of a spacious, airy banquet room with 20 arching floor to ceiling plate glass windows. 

A wide variety of menus are offered and the service is superb.   Personalized planning with our wedding coordinators Lynn Brown and Jennifer Leskovar assure an event that will be wonderful and memorable. 

Dates for the 2010 season are still available. We do get cancellations from time to time so check back or call for our wait list if your date isn't available.  
Most 2011 dates are still open.

Beardslee Castle's "Team Kathy" was awarded "Highest Total Pledge" for the Restaurants & Taverns category at this years Great Amercian Heart Run & Walk in Utica. Team members L to R front: Daisy Aluarte, Jennifer Leskovar, Lynn Brown; back: Brian Paratore, Sarah Jones, Sandy Barker, Holly Damboise. Last year Team Kathy won for "Highest Average Pledge".

Lynn Brown is incentives chairman for the Heart Run & Walk Planning committee. Team Kathy was formed in memory of Lynn's mother, Kathy Delaney, who lost her battle with heart disease in 2005.

We are located just off the New York State thruway less than an hour from Albany and just over an hour from Syracuse. 

We source hydroponic organic greens & vegetables from Sunset Hill Farms, Gaia's Breath Farms I-Lion Farms and East Creek Organics.  Other organics, and grains are from the the Community Co-Op in Little Falls and the Little Falls farmer's market.  Our Pastas are from The Pasta Shop in New Hartford.
